Once the optimal phenolic ripeness is reached, the grapes are harvested, de-stemmed and softly pressed. The fermentation with maceration takes place in steel containers at a controlled temperature of 22 – 24 ° C for about three weeks, carrying out punching down and pumping over to extract the greatest amount of substances contained in the skin. After racking and malolactic fermentation, the wine is aged for a period of 8 – 10 months in 5 hl oak barrels.
Organoleptic characteristics
Wine with a bright ruby red color. The aroma is intense, the nose releases notes of plum jam, ripe fruit including blackberry and black currant, all delicately accompanied by hints of vanilla and licorice. In the mouth it is harmonious, structured, rich in soft tannins, a wine of great personality.
