Once the optimal phenolic ripeness is reached, the grapes are harvested, destemmed and gently pressed. Fermentation with maceration takes place in steel containers at a controlled temperature of 22 – 24 ° C for about three weeks, carrying out punching down and pumping over to extract the greatest amount of substances contained in the skin. After racking and malolactic fermentation, the wine is aged for 18 months in new French oak barriques and then 6 months in the bottle. Low yields, on average 45 quintals per hectare.
