The grapes are de-stemmed, gently pressed and then fermented with maceration of the skins for about three weeks at a controlled temperature of 22-24 ° C in steel containers. During this period, several punching down and pumping over are carried out in order to extract the greatest amount of aromas and color from the skins. The racking and malolactic fermentation are then carried out. Aging takes place for 8-10 months in 5 hl oak barrels.
Ruby red color with reflections tending to garnet, strong, penetrating aroma, with notes of wild berries, cherry, jam all surrounded by a slight hint of spicy and vanilla notes, very seductive, full, enveloping taste, with velvety tannins and very elegant, intense and persistent.
It goes well with savory first courses, roast beef and pork but also with game and feathered game. It can also accompany medium and long-aged cheeses.
